Then make a well in the centre and stir in the fruit and Spiced Chai mixture. &lt;/li&gt;&lt;li&gt;Add the beaten eggs and stir until well mixed. They’re delicious served with crème fraiche or a scoop of vanilla ice cream.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Serves 4&lt;/span&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;75g Unsalted Butter&lt;/li&gt;&lt;li&gt;75g Clear Honey&lt;/li&gt;&lt;li&gt;4 tbsp Double Cream&lt;/li&gt;&lt;li&gt;4 Eating Apples (I used Cox’s), peeled, cored and thinly sliced&lt;/li&gt;&lt;li&gt;120g Dean’s Butterscotch Shortbread Rounds&lt;/li&gt;&lt;/ul&gt;&lt;span style="font-weight: bold;"&gt;Method&lt;/span&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Preheat the oven to 200°C. Many of the traditional Lancashire and Cumbrian dishes bear common routes, and are based on great locally grown and farmed produce.&lt;br /&gt;&lt;br /&gt;This recipe for Lancashire Hotpot is the recipe I use at home, but as with many of these dishes every household makes their own version, mine is based on my mothers recipe and always reminds me of my childhood.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Serves 4 - 6 people&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Ingredients&lt;/span&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://www.realfooddirect.co.uk/images/products/big/haw10big.jpg"&gt;&lt;img style="margin: 0pt 0pt 10px 10px; float: right; cursor: pointer; width: 213px; height: 213px;" src="http://www.realfooddirect.co.uk/images/products/big/haw10big.jpg" alt="" border="0" /&gt;&lt;/a&gt;&lt;ul&gt;&lt;li&gt;2lb best end or middle neck of lamb, cut into bitesize pieces, cutting off any excess fat&lt;/li&gt;&lt;li&gt;1   whole link of great lancashire Black pudding cut into 4 - 6 pieces&lt;/li&gt;&lt;li&gt;&lt;a href="http://www.realfooddirect.co.uk/index.php?manufacturers_id=261"&gt;Hawkshead Relish&lt;/a&gt; (bottled sauce similar to Worcester Sauce but a softer version)&lt;/li&gt;&lt;li&gt;2   large Onions sliced&lt;/li&gt;&lt;li&gt;1   large Carrot sliced&lt;/li&gt;&lt;li&gt;Oil&lt;/li&gt;&lt;li&gt;Butter&lt;/li&gt;&lt;li&gt;plain flour&lt;/li&gt;&lt;li&gt;Bay leaf&lt;/li&gt;&lt;li&gt;Thyme&lt;/li&gt;&lt;li&gt;2lbs potatoes (waxy lancashire potatoes) cut into thin slices&lt;/li&gt;&lt;li&gt;Sea Salt&lt;/li&gt;&lt;li&gt;Freshly ground black pepper&lt;/li&gt;&lt;/ul&gt;Pre heat the oven to 170c/325f/Gas3&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Method&lt;/span&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Having trimmed any excess fat from the lamb and pat dry with kicthen paper, roll the meat in some seasoned flour, heat the oil in a heavy bottomed frying pan and cook the meat a few at a time intil browned all over and transfer to a heavy based casserole dish. &lt;/li&gt;&lt;li&gt;Fry the onions, carrots and black pudding with a little butter in the frying pan and transfer to the casserole dish adding a couple of teaspoons of the Hawkshead Relish together with 20fl oz of boiling water and season with salt &amp;amp; pepper, the bay leaf and a little thyme, allow the pan to simmer for about 5-10 minutes adding a little more water if needed, it should just cover the meat but not drown it. &lt;/li&gt;&lt;li&gt;Remove from the heat and layer the potatoes seasoning with salt &amp;amp; pepper in between each layer. This is concerning for the industry as I know there are other embryonic plans in the industry based on its perceived success.  This latest set-back follows the failure of Food Inc in Bayswater at the beginning of the year and the well-documented struggles of Wholefoods Market in Kensington who continue to announce large losses.  &lt;!--more--&gt;&lt;br /&gt;&lt;br /&gt;In British Food Fortnight, what is the future for urban food halls concentrating on selling British produce to the British public?  I am particularly keen to find out the answer to this question as I have lost £15,000 in bad debts to the two outlets named above in this calendar year.  I am wondering whether we should continue to offer credit accounts to these potentially large customers.  This week I would really value some thoughts on why places like this aren’t prospering as the rest of the industry seems to be.  I was at a well-known farm shop in the North of England yesterday, who is reporting year on year growth of around 15%.  Our turnover as a wholesaler is projected to be around the same for this financial year – and this is largely due to farm shops buying more from us.  Regular readers of this blog will know that we celebrated our 10th anniversary earlier this year by inviting our top 50 customers.  The vast majority were farm shops, not urban food halls.&lt;!--more--&gt;&lt;br /&gt;&lt;br /&gt;So, why are farm shops prospering and urban food halls struggling?  I would love to see more of these places open and stay open as they are more likely to be positioned geographically near supermarkets and take business off them.  I suggest the following possible reasons as things to be aware of if you go down this route:&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Crippling rent – generally farm shops would have low or no rent as they are on owned premises, whereas premises in towns and cities can command enormous prices.  Now is a good time to negotiate these downwards.&lt;/li&gt;&lt;li&gt;Enormous business rates – again these are generally a lot lower for farm shops.&lt;/li&gt;&lt;li&gt;Stocking the right products for the catchment area.  Wholefoods have recently admitted that they have far too much fresh produce in their store when half the people that go through the doors are tourists staying in hotels who are unlikely to buy this.&lt;/li&gt;&lt;li&gt;Car parking – farm shops have lots, whereas you might not be able to park anywhere near a food hall in a high street.  (A free home delivery service would be almost essential otherwise customers' baskets would not be big enough.)&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;As I said at the beginning, I dearly hope there is a future for these urban food halls.  If nothing else we will lose less money through bad debts. It is very easy and truly delicious.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Instructions&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Preheat the oven to 220°C.&lt;br /&gt;&lt;br /&gt;Weigh the lamb and calculate the final cooking time at 12 minutes per 450g for medium-rare, 15 minutes per 450g for medium. Score the fat in a criss-cross pattern, then drizzle with a little olive oil and rub all over with NoMU Rub, salt &amp;amp; pepper. Place in a deep roasting pan and scatter the garlic and thyme over and around. Pour over the lemon juice and drizzle again with olive oil. Sprinkle with a little more NoMU Lamb Rub, then roast in the hot oven for 20 minutes.&lt;br /&gt;&lt;br /&gt;Remove the lamb from the oven and reduce the heat to 180°C. Scatter the apples around the pan and pour the cider and honey over the lamb. Continue to roast for the calculated time. To check, insert a skewer into the thickest part of the lamb, then press the meat lightly, the redder the juices, the rarer the meat. Lift the lamb onto a carving board and cover with a piece of kitchen foil. Rest it in a warm place while you prepare the gravy.&lt;br /&gt;&lt;br /&gt;Pour the contents of the pan, including the apples and garlic into a fine sieve set over a saucepan. Push down with the back of a ladle to extract all the juices and flavour and then discard the pulp. Place the pan over a medium heat and add the stock. Bring to the boil and let it bubble vigorously until it has thickened. Taste and adjust the seasoning, then pour into a warm serving jug. Carve the lamb into thin slices and serve drizzled with the apple and cider gravy. float: right; cursor: pointer; width: 277px; height: 165px;" src="http://www.realfooddirect.co.uk/blog/uploaded_images/honey-yogurt-muffin-705453.jpg" alt="" border="0" /&gt;&lt;/a&gt;&lt;ul style="text-align: left;"&gt;&lt;li&gt;3tbsp Drink Me Spiced Chai &lt;/li&gt;&lt;li&gt;50g medium oatmeal&lt;/li&gt;&lt;li&gt;2tbsp boiling water &lt;/li&gt;&lt;li&gt;50g light muscavado sugar&lt;/li&gt;&lt;li&gt;125ml milk &lt;/li&gt;&lt;li&gt;50g butter, melted&lt;/li&gt;&lt;li&gt;225g plain flour &lt;/li&gt;&lt;li&gt;1 x 200g tub Greek style yogurt&lt;/li&gt;&lt;li&gt;1½tsp baking powder &lt;/li&gt;&lt;li&gt;1 large egg, beaten&lt;/li&gt;&lt;li&gt;1tsp bicarbonate of soda &lt;/li&gt;&lt;li&gt;4tbsp runny honey&lt;/li&gt;&lt;li&gt;A pinch of salt &lt;/li&gt;&lt;li&gt;A little extra medium oatmeal for dusting&lt;/li&gt;&lt;/ul&gt;&lt;span style="font-weight: bold;"&gt;Instructions&lt;/span&gt;&lt;ol style="text-align: left;"&gt;&lt;li&gt;Preheat the oven to 200c/400f/gas mark 6.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Place the Spiced Chai in a jug, add the boiling water and stir until dissolved and smooth. Then top this mixture up with the milk and set aside.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;In a large bowl sift together the plain flour with the baking powder, bicarbonate of soda and salt. Stir in the oatmeal and sugar and make a well in the centre.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;In a jug mix together the melted butter, yogurt, beaten egg and honey then stir in the Spiced Chai mixture and pour into the dry ingredients. Stir together until just mixed together, if it looks a little lumpy this is fine as over mixing will result in rubbery muffins.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Divide the mixture between a 12 hole deep muffin tin lined with muffin cases then sprinkle each with a little extra oatmeal.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Cook in the preheated oven for 15–18 minutes or until well risen, golden and firm to the touch. Remove from the oven and cool for a few minutes in their tin before removing and cooling on a wire rack. Put the fatty rinds into a pan with the onions. Cover and cook over a very low heat for 5 minutes. Discard the rinds, and add the chopped bacon. Cover and cook for 5 minutes. Leave to cool.&lt;/li&gt;&lt;li&gt;Meanwhile stir the yeast, water and sugar together. Leave for 10 minutes.&lt;/li&gt;&lt;li&gt;Put all ingredients into the bread maker and set to mix and cook a 1.5lb/675g loaf immediately (do not use the delay facility). Remove cooked loaf from pan and cool.&lt;/li&gt;&lt;/ol&gt;&lt;span style="font-weight: bold;"&gt;To bake in an oven&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;At step 2 stir all ingredients together (do not mix the fast action yeast with the water first) and knead on a lightly floured surface for 10 minutes. Put into a covered bowl and leave in a warm place until doubled in size (approx 1 hour).&lt;br /&gt;&lt;br /&gt;Knead for 5 minutes. Shape into an 8in/20cm round and put onto a floured baking sheet. Cover loosely with oiled cling film and leave in a warm place to rise until doubled in size. Bake at 210C/425F Mark 7 for 15-20 minutes or until cooked through, (the underside of the loaf will sound hollow when tapped).
